- 2 cups chopped bok choy or spinach

- 1 tablespoon sesame seeds (optional)
- Chili flakes (optional, for extra heat)

Method:
1. Prepare the Tofu:
Press the tofu between paper towels or a clean kitchen towel to remove excess moisture. Cut the tofu into cubes and set aside.
2. Cook the Noodles:
Cook the ramen noodles according to the package instructions. Once cooked, drain and set aside.
3 Prepare the Broth:
Combine the vegetable broth, water, soy sauce, sesame oil, miso paste, minced garlic, and grated ginger in a large pot. Bring the mixture to a simmer over medium heat, stirring occasionally.
4. Cook the Tofu:
In a separate pan, heat a bit of oil over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. This is the secret to getting that perfect crispy texture! Remove from the pan and set aside.
5. Add the Mushrooms and Greens:
In the same pan used for tofu, add a bit more oil if needed. Sauté the sliced mushrooms until tender, about 3-4 minutes. Add the chopped bok choy or spinach and cook until wilted, about 2-3 minutes—season with salt and pepper to taste.
